Piadina Italian Style Flatbread ~ Meal
A piadina is an Italian street-style sandwich.

Fill the lightly toasted bread with whatever your heart desires. Here is a vegetarian and non-veg option.

Wrap of your choice
Rocket
Pancetta (Vegetarian option pumpkin)
Bocconcini cheese sliced
Sun-dried tomato pesto
2 tablespoons of olive oil
Half a dozen almonds
Half a dozen sun-dried tomatoes
2 tablespoons of parmesan
Pepper (no need for salt due to parmesan)
Preparation
Using a blender blitz ingredients for sun-dried tomato pesto.
Slightly warm the wrap on a pan or sandwich press.
Spread the wrap with pesto and on one-half layer all fillings and fold over.
There will be extra pesto to make another if you are still hungry. Enjoy!
