Calling all lemon and lamington lovers.

Using the off-cuts of a flopped sponge cake is perfect for making these lip-smacking non-traditional lamingtons. Don’t waste your sponge if it has flopped! Pic of sad flopped sponge below.

If you make the lamingtons with a whole sponge cake you may need to triple the icing mix.

Provisions Guide

  • Sponge cake, whole, flopped sponge or sponge off cuts

  • 1 cup of icing sugar

  • 40g of lemon butter/curd

  • 1 tablespoon of lemon juice

  • 1 tablespoon of hot water

  • Desiccated coconut to coat

  • Extra lemon curd or jam for the centre of lamington if desired.

Preparation

  1. CUT sponge cake in half down the middle length ways.

  2. SPREAD with jam or lemon curd on one side of the sponge and sandwich back together. Cut sponge sandwich in pieces.

  3. MIX all ingredients other than coconut and place the coconut in a separate bowl.

  4. DIP the sandwich sponge pieces in the icing and then the coconut.

  5. ATTEMPT not to lick your fingers or eat lamingtons all at once, lick the icing bowl instead. Enjoy!
